Driving Adventures

I haven't driven since I passed in 2003! So now that we have a small transport mainly for ferrying the kids to school, it means the mummy here has got to brush up her driving skills...FAST! Dan has given a deadline that no more school bus fees by March so I have just got one month to practice!

So while the kids are at school in the morning, its time for me to practice my driving upstairs in the multi story carpark! This was my first attempt at reverse parking. Its just so embarrassing but I want to look back and laugh at myself next time. I wonder how I could have ever passed back then!

After trying and adjusting for another 15 mins, I went down one level and finally parked! One head first and the other reverse.

Looks so nice, but don't be fooled as these were not even the lots I planned to go into! I actually wanted to go into the ones on the left... *shakes head at myself*

Three more weeks to go so am praying hard that I will slowly gain confidence to be the Mummy bus driver to school! Next step is to head out of the carpark and go into the open. And then finally to the open road.....wish me luck and pray I can do it!

Pizza Making!

Ok the pizza is not exactly symetrical but the dough tasted really good! Found this recipe to make the pizza dough in the bread making machine.

Put ingredients into your bread machine in this order:
  • 1 cup warm water
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1.5 teaspoons sea salt
  • 3 cups sprouted spelt flour (or your favorite whole-grain flour, or bread flour)
  • 2.5 teaspoons active dry yeast
Set your machine for dough cycle (mine takes one hour and 50 minutes) and be sure to check about five minutes into kneading to make sure your dough is a smooth ball. You may need to add a little more water or a smidge more flour, depending.

After adding my desired toppings, I pop these pizzas in the oven at 200 degrees for about 14-16 minutes.
