Herbal Chicken

Tried making an old family favourite of herbal chicken but think would have been nicer with the skin on although not so healthy. A quick nice dish on  a cool, rainy day.
1. boil all herbal ingredients in a small pot with water just covering the herbs
2. add a little soya sauce and chicken stock and boil for about half an hour
3. wash chicken
4. stuff cooked herbs into chicken and put remainder below chicken and pour remaining stock over uncooked chicken
5. wrap up chicken in foil and steam for an hour.
6. serve with warm rice and vegetables

Little Fruits!

I'm really so proud of my kiddies! We have always told them to try their best in all they do. Even for Jedidiah's school work we don't reprimand him for mistakes in his tests, but just tell him to be more aware and careful next time. Of course I have to stop myself at times from wanting to nag at careless mistakes as I don't want to put pressure on him. So we were really proud to see him do well for his 2nd term. Best part is the teacher printed his first term results wrongly so it was great to see the new one. Even though future reports may not be as good, we're glad it's a good start and pray he will be dilligent in all he does and be a boy who continues to seek the Lord for wisdom.

We are so proud of Krisalyn too! She has always been asking how come she never gets an award in school and how come her friends can get it. We told her it doesn't matter. Just keep being a good girl and if you get it one day, that's great if not it doesn't mean you are not a good girl. Jedi dosen't help by flaunting his award he got in preschool before her too. So when she got it today, she was so happy! Very proud of her too!
Keziah is making good progress too! She is beginning to want to write, colour and trace. Her current fave is drawing circles!  Good job little one!

Learning Journey with Daddy!





Dan took some time off despite his busy schedule to go for the Learning Journey with Jedi in May. Jedi was thrilled to bits and told me from the start he preferred Dan to go rather than me! Was a good chance to have son daddy-son bonding.

The Learning Journey was teaching the Primary Ones how to make their own Milo drinks and pizza for this session. Jedi loved it as pizza is one of his favourite foods!

Thanks dear for taking the time off to go with Jedi for this session. You made him very happy and very proud of his Daddy!

Mother's Day 2012

I have never regretted deciding to stay home to look after my kids. I am so blessed and thankful too that my workplace has allowed me to do some contract work here and there to keep me current  and also to keep me a bit sane. Had a wonderful mother's day and am thankful for the love from my kids and from my dear hubby who has been so supportive to me and for  allowing me this privilledge of staying home to raise the children. Love you very much dear.

Stir-Fried Green Marrow with Prawns


A simple veggie dish for the family. Soft enough for the kiddies and not too much fibre to chew but full of nutrition. Heard the green marrow helps to build up the immunity. Not sure how true but I guess all veggies are good!

Ingredients:
2 green marrows(skinned and sliced)
6 prawns, shelled, cleaned and sliced
1 tsp of chopped garlic
2 beaten eggs (already mixed with a little sugar and light soya sauce)

- heat oil in wok and stir fry the garlic till fragrant
- then add in sliced green marrow and fry till a little soft
- add in prawns and fry till changes colour
- add in a little sugar, scallop sauce and fry till well-mixed
- add in beaten eggs and cover lid of wok for a few minutes
- when egg is almost set stir all together

Stir-Fried Asparagus with Baby Corn and Stewed Pork


Ingredients:
1 packet of asparagus
1 packet of fresh baby corn
1 small tin of stewed pork ribs (Narcissus brand)
1 tsp of garlic
1 tsp oyster sauce

- add oil to wok and fry garlic till fragrant
- add in sliced asparagus and fresh corn and stir fry till colour changes
- add in stewed pork and add a little brown sugar and oyster sauce
- give a good stir and close wok lid to let mix simmer for a few min
- serve hot with rice
