Fairy Cakes
Used the Greens Cake Mix for English Tea Cake.
Surprisingly easy as just add eggs, milk, butter and blend. Bake and voila! Then just decorate with your own toppings. Chose the colourful ones to make them into Fairy Cakes for the kids.

Our sweet but fiery littlest princess...
Don't let this look decieve you. She looks all demure and sweet especially with the flower on her head right? but our littlest one has a will of iron!
Amongst the three she is the most vocal but also the most strong-willed of the three. A recent ancedote was when she had a little fall that made it painful for her to go and pee. She held on to her pee for a full ten hours and only finally peed when it was just too urgent for her. Thinking that she would have overcome her fear, we felt relieved. But it was short-lived as she was still fearful and again held it for almost the entire day, We tried all these methods:
- took away her favourite stuffed cat
- took away her pacifier that she STILL wants to suckle at night
- even told her that she won't get to sleep in her bed till she peed which resulted in me greatly exaggerating it by taking away her whole mattress, pilow blankets and all!
Still didn't work!
So we tried the soft approach...
- tried to bribe her with a lolly
- even took out the potty and told her she could eat the lolly while sitting on it! ( a big concession given that i NEVER allow them to eat and poop!!!)
- even turned on the TV to let her watch, pee and have her lolly! (double concession!!)
Still didn't work...
So had to use scare tactics and made up a fictious uncle who would take her away to the hospital if she still refused to pee. Hubby and I had to act, one knocking the door while the other telling her to quickly pee as the 'uncle' was here!
Still feel guilty for inflicting such trauma! but it WORKED!!
For our other two just taking away their favourite thing was enough! But its a whole new ball game for our littlest! On the bright side,she is the most vocal, joyful and says the funniest things which tickles us so! She would comfort her siblings with a hug and a pat when they are down and even pray for the needs that she sees they have...

A date with my dearest....
For us, time as a couple is really so treasured as unlike most people we don't have parents' help with the kids. My folks are still in Perth and Dan's parents aren't able to because of other commitments. So it was a real treat when Dan made arrangements for us to steal some time out. We were supposed to see the musical 'Wicked' as we had complimentary tickets. But after thinking it through, we felt it would be better if we spent the time to just hang out with each other over a nice slow meal, without the kids and in a nice cozy setting. So we went to my all time favourite, Jack's Place!

Valentine's Day 2011
My dear hubby as usual doesn't believe in V day as he feels its another day the flower shops and restaurants make more $$! My girl dreams of flowers and roses and chocolates went down the drain in the face of such realism! But underneath this stand of his, lies a very sweet part of him that will still indulge despite his stand that 'Everyday can be V day!" Thanks dear for buying all this and now I have to go lose some weight!!!!!! But thanks for your love all these years. Am learning that love goes deeper than just one Valentines' Day! Loving you still and more~~~

Chicken and Avocado Sandwich!
I just loooooooooooooooooooove avacados! Especially after my last trip to Perth where the avocados there were so lovely. Green and creamy and we had great home-made salads made by my dad. I found them in Singapore but they were like rocks! so not to be daunted I went to do some research on how to get the perrrrrfect avocado. And I was pleasantly surprised! All you have to do is to wrap the unripe avocadoes individually in newspaper and check them every day or so. Once they have become a little soft they are ready to eat!
Anyways, my mum-in-law always makes lovely soups with lots of chicken meat which usually dosen't get eaten. So instead of throwing it away, I shredded it and mixed it with a little salt, sugar, basil leaves and Japanese Mayonaise. Got two pieces of buttered bread, put the chicken and some chunks of avocado and voila! A healthy and delicious meal with a 'recycling' feel!
